Easy Breezy Pasta

Ingredients
- 2 ½ cups vegetable stock
- 2 ½ cups plant-based milk
- 250-500 grams tomatoes
- ⅓ cup nutritional yeast
- 2 tablespoons tomato paste
- 1 handful fresh basil
- 1 small onion
- 2 garlic cloves
- 125 grams baby leaf spinach
- Salt and pepper
Directions
- Chop the onion, garlic and tomatoes
- Fry the onion until clear
- Add the garlic and cook a bit longer
- Mix in the tomato paste until well coated
- Add tomatoes and cook until softened a bit
- Throw in the stock, plant-based milk and pasta, mix well
- Simmer for about 10 minutes, stirring occasionally so it doesn't stick
- Once the pasta is pretty much ready, stir in the basil, spinach and nutritional yeast
- Stir through and cook for about a minute until the greens have wilted
The tastiest pasta you can imagine at a fraction of the effort. Great hearty feed for those cold winter nights.

Minimal preparation steps. You can use any kind of tomatoes.

Easy one pot cooking mate. I found rice milk the best here.
